Easiest Curry Ever {vegan}

It’s been so hot that I just want to make smoothies and watermelon for breakfast lunch and dinner. Watermelon is life :D

But the other day a miracle happened and it actually rained. Big droplets on the windshield, lighting, and that rain on the pavement smell.

And then the unthinkable happened- we needed jackets ;)


Naturally, I pretended it was 40 degrees instead of 80 and deemed it necessary to make something warm..


I love having these sauces in the pantry! You literally just have to make some brown rice or quinoa, vegetables, and some sort of protein and BAM. Dinner is ready.

  1. 1 jar of healthy curry sauce (I love the Curry Love brand at Whole Foods)
  2. Vegetables- kale, mushrooms, peas, spinach, carrots, etc)
  3. 1/2 package organic tempeh
  4. Brown Rice or Quinoa
  1. Saute vegetables and tempeh with a little coconut oil until heated through. Pour in curry sauce and let simmer. Cook desired amount of brown rice. Place brown rice in bowls and pour the curry over top.

Literally takes 5 minutes from start to finish if you buy the frozen brown rice- that’s the time it takes me to figure out how to turn on the microwave much less use it! ;)

  5. Yum!! :) I am a HUGE fan of curry but my mom hates it so I never make it- (she isn’t a fan of coconut or spiciness..) tonight I am trying tempeh for the very first time :) So excited.
