I have finally found the answer to all my questions. Cooking questions, that is
It’s egg whites.
They are magical protein filled things that make everything better. Enough said.
For years, I have tried to master healthy granola. But they always turned out dry and gross without all the yummy oil and sugar.
Until now. I just discovered that egg whites hold the granola together and make it super crunchy. And add a protein boost!
So *drumroll please* I present to you…
Healthy Cinnamon and Coconut Granola
- 2 cups rolled oats
- 1 egg white
- 1/4 cup honey
- about 1/4 cup oil
- 1/4 cup shredded unsweetened coconut
- almonds, cranberries, raisins, sunflower seeds, pumpkin seeds, cashews, dried fruit (you pick)
- 1 tsp. vanilla
- big pinch of salt
- shake of cinnamon
Preheat oven to 325. Mix dry ingredients. In another bowl, mix egg white, oil, honey, and vanilla. Pour over granola. Lay foil or parchment paper on a pan, and spread the granola evenly over it.
Cook for about 30 minutes, checking every now and then. Take out of the oven and LET SIT for 15 minutes. I mean it Patience is key haha. Sitting makes the granola harden and form clusters.
I think I am turning into granola. I have topped anything and everything with it in the last 24 hours- yogurt, cereal, even salads.
On another note, I changed my blog look again! I’m still figuring some things out, though- all these computer codes are making me dizzy!
