There are certain things that are the definition of comfort.
Soup on a cold day. My sister giving me her sweater, which smells like coffee and the faded scent of Warm Vanilla & Brown Sugar perfume.
A kiss from Zazu. The smell of my grandma’s house. Watching Forrest Gump for the 876th time
And of course…APPLE PIE!
In honor of Pi Day(3/14 whoop whoop!), I present to you a healthy Apple Pie with a Peanut Butter Crumble. We actually get points for bringing in a pie to school. No complaints there!
- 2 cups oats
- 1/2 cup agave or honey
- 4 T. Peanut Butter
- about 5-6 apples, peeled and sliced
- more agave for drizzling
1.) Put half the oats (1 cup) in a blender and blend until its a flour. (about 20-30 seconds)
2.) Add half the agave (1/4 cup) and half the peanut butter (2 T.) and a pinch of salt and blend with the oats.
3.) Press into a pie pan. (Bonus points if you can spot the paw in this picture haha)
4.) Bake at 400 for about 10 minutes, until its a little hard.
5.) Add apples, cinnamon, and about a tablespoon of agave to give the apples moisture.
6.) Repeat blending process with remaining ingredients. Crumble over the top of the apples.
7.) Cover with tin foil and bake for about 20 ish minutes (really depends on your oven, keep checking every now and then)
When the apples are soft, take the tin foil off and cook for another 5 min so the top can get crispy.
