The red rocks were gorgeous, the weather perfect, and the town calm as always.
Last night, I spent about half an hour doing lunch prep because it saves SO much time during the week.
So let’s talk lunch.
Easy, healthy, already made lunch.
With whole foods like sweet potatoes, veggies, almonds, and chicken.
- 3 chicken breasts
- 1 cup almonds
- 3 sweet potatoes
- 1 large zucchini
- Parmesan cheese
Rinse the chicken, and coat it with whatever you want- I like balsamic vinegar, a little oil, and salt. Place in a baking dish and bake at about 375 until done, which usually takes 35ish minutes, but depends on the size of the chicken and oven. You need it to be white all the way through and be fully cooked.
Bake your sweet potatoes whole, wrapped in foil, at 400 for an hour or until soft.
Cut zucchini into slices. Once the chicken has cooled, Layer Tupperwares with chicken, potatoes, zucchini, and almonds. Coat it all in copious amounts of Parmesan cheese
And there you go! It might be simple, but covered in Parmesan snow and more balsamic it’s awesome.
