I was getting my ingredients out.
I carried dates, cinnamon, almonds, nut butter and chia seeds all from the pantry to the counter in one trip. And then, it happened.
I dropped the chia seeds. Thousands of the little seeds crashed to the floor, covering the kitchen floor.
I took a deep breath, relieved that I have one awesome, awesome vacuum that never misses a spot.

After the chia incident, I salvaged the ones left (5
second minute rule, right? ) And I whipped up another batch of the best little energy squares ever.
- heaping 1/2 cup almonds
- 5 dates
- 1 big tablespoon nut butter
- big pinch of salt
- 1 T. chia seeds (DONT DROP!)
- a few shakes of cinnamon
Put your almonds in a blender or food processor and blend until they are in small pieces. Add the salt, cinnamon, and chia seeds, and blend for another few seconds. Chop and pit dates and toss them in the blender along with your big spoonful of nut butter. Blend (doesn’t take long) until the mixture starts to stick together. If it’s not sticky, add some honey to the blender.
Roll out on a cutting board. Chop into thick squares.
And TADA!!! Swoon. Just like cookie dough. <3
