This weekend was so much fun! Buddy was fantastic and I enjoyed getting out of the heat!
When I came home, I wanted chocolate. It’s sad I get chocolate withdrawal symptoms. So I made some ABCs!
What does ABC stand for?
Almond Butter Cups, of course!
My favorite candy has always been Reeses Peanut Butter Cups.
But they’re not exactly the healthiest! So I recreated them with salted dark chocolate and almond butter. Mission definitely accomplished!
Base: (adapted from Oh She Glows)
- 1/4 cup rolled oats
- 2 tablespoons almond butter
- 1/4 cup whole almonds
- pinch of salt
- 2 heaped tablespoons of honey or agave
- 3/4 bar dark chocolate
- pinch of sea salt
- cupcake/muffin liners- these save you the hassle of having to pry them out of the pan!
1.) Bland raw oats and almonds for about 15 seconds. Add honey, almond butter, and salt, and blend until just sticky.
2.) Line muffin pan with cupcake liners. As you can see, I didn’t, and I really wished I had! Press the almond mixture into the muffin pan.
3.) Heat water in a sauce pan over medium high ish heat. I always take two small bowls, break the chocolate up, and let it melt .
4.) Pour chocolate over almond mixture
5.) Once even, place them in freezer for about a minute or two
Yours will turn out prettier because they have the foil cupcake liners! I din’t even need to workout yesterday- prying these things out of the pan was enough!
These are rich, salty sweet, and totally addicting.
