Guess who got into trouble last night again??
I’ll give you a hint:
Yep. Zazu. It involved a pair of shoes, his teeth, and a lack of a bone. Not a good combination!
What is a good combination though, is this awesome Greek salad I whipped up for dinner! It’s full of feta, balsamic, good olive oil, and veggies. Oh, and lots of fiber!
I love the quinoa salad from Whole Foods, but the price adds up, especially with school having started!

Let’s get this recipe rollin:
1 cup dry quinoa-(2 cups water for cooking)
1 cup chopped bell pepper, olives, tomatoes, and cucumber
1 cup crumbled feta cheese
2 T. balsamic
2 T. olive oil
salt, pepper, and rosemary
Cook quinoa according to package. Usually its 1 cup quinoa to 2 cups water, and you bring both to a boil and them a simmer for 15 minutes.
Let cool, place in a bowl. It should be soft and fluffy.
And some veggie love
Make dressing- combine olive oil with vinegar, rosemary, and a pinch of salt and pepper. Don’t skimp on the oil or vinegar- the quinoa soaks up all the dressing! This is an old picture(the dressing amounts to more)
