Sweet 16 and a Coconut Flour Cake with Lemon “Frosting”

Thank you guys so much for all the birthday wishes! It was my bday on Wednesday, and you bet this cake made it to the party… ;)


It was a Coconut Flour Cake with Lemon Greek yogurt frosting, and it turned out great! Coconut Flour is a new staple in our pantry. I bought Bob’s Red Mill brand, and it was free of gluten, full of the good stuff.

And topping your oatmeal off with cake the next day is totally acceptable when it was your birthday ;)


My family and friends came to celebrate with us, it was such a good bday. Everyone raved about this cake when it was time to cut it :)

Coconut Flour Cake with Lemon Greek Yogurt Frosting

Ingredients: (Dry)

  • 1 cup coconut flour
  • 2 heaped teaspoons baking powder
  • pinch of salt

Ingredients: (wet)

  • 5 eggs
  • 1 small container organic plain greek yogurt ( equals about 3/4 cup)
  • 1 tsp. vanilla
  • 4 heaping T.  honey
  • 1/2 stick organic butter
  • 2 T. coconut sugar (regular sugar works, too)

Ingredients (Frosting)

  • 1.5 cups plain Greek yogurt
  • 1 T. coconut flour
  • 2 T. Honey (you can make it sweeter if you want)
  • Zest of 1 lemon


Preheat oven to 350 degrees.  Add honey and butter in a saucepan over low heat. In a large bowl, beat eggs. Add vanilla and yogurt to the bowl and mix well. When butter and honey are melted, set aside to cool for 5- 10 minutes (You don’t want it to cook your eggs yet!). When it’s cooled off a little, pour in a slow stream into your bowl, stirring as you go.

In a seperate bowl, combine dry ingredients: flour, baking powder, sugar, and salt. Stir. Mix dry ingredients into wet ingredients, stir until smooth.

Grease a normal size cake pan well. Tip: Place your cake pan on parchment paper and trace around the bottom. Cut out the circle and place in the bottom of your pan for a smooth finish. Add batter into pan. Bake in oven for about 35-40 minutes, until a toothpick comes out clean.  Let cool for an hour before frosting. (or put it in the fridge and stare and it impatiently like I did ;) )



Put Greek yogurt, honey, lemon rind, and coconut flour into a bowl. Mix well, freeze for 1-2 minutes. Spread over cake, and top with honey and lemon slices, and coconut flakes if you want!

  7. Happy [belated] birthday, love! It’s great to hear that you had such a good one, and I agree that topping your oatmeal with leftover cake is perfectly acceptable :D

    Speaking of cake, that one really does look amazing. I love the taste and texture of coconut flour, but I have the hardest time working with it, so this is a recipe that I’m definitely going to be keeping in mind.

  9. Happy belated b-day! That cake looks amazing. Love the frosting on top– I’m not a big fan of super-super sweet frostings that are gritty with sugar, so this sounds perfect.

      Thank you! The cake was really sweet, so this frosting totally cooled it down. My grandma said I should make a huge pot of just the frosting haha ;)
